I don't think Rapunzel is always kind. She had no problem threatening to beat Flynn with a frying pan again :p or the whole "this would KILL Mother!" scene.

Many of them are, but I think Cinderella gets a chance to show it off more. She regularly saves all the mice from traps and Lucifer, provides them with food, clothes, names, and lets them stay in her room so they feel safe and at home. They don't have to worry about struggling to survive because of all the nice things she does for them.
