It is my strong opinion that bananas reach their peak of perfection, which has a window of only a few days, when they are still somewhat green, and turning yellow. It can have a light shade of green over most of the banana, to just a small amount, usually near the top--and very minimal bruising oder browning. Thus spaketh I.
