Azula is one of the strongest people on the planet. Don't get me wrong, Katara is strong too, which is proven. But I really think Azula could find some control. She can bend lightning, which calls for peace of mind- even when she was really in pain and losing her sanity, she could still bend lightning. Katara doesn't like using blood bending anyway.

She would still be able to firebend.
Katara would only use bloodbending if it was absolutely necessary though and it would have to be a full moon.
She could probably win even if she was sane by breathing fire all over the place XD

Even if Azula could breath fire out of her mouth, Katara could be a couple of meters away and not feel it. But I doubt Katara would have used Bloodbending on Azula. It wasn't a full moon.

Not to mention it's been porven in Korra that one can overcome bloodbending by focusing enough. Aang did so with Yakone. Azula is strong-willed and determined. I think she could do it.

Azula can Lie undetected by Toph even when everyone knows she is lying. I think She can Handle blood bending too.
