Because they're believable. Since she was one of his students and, later, an assistant they most likely spent a lot of time together where they got to know each other, became Friends and then a couple. She's the kind of woman he can be with without having to be the man he isn't. She's attractive inside and out and she can even speak his Home language and understand his culture. They're brilliant people that bonded over shared interests. They're similar about some things and yet willing to accept their diversities (it's obvious from the scenes in the movie that she doesn't want to change him) With her he can accept his human side and balance it with the vulcan one, he can find a peace that the other Spock found only when he was very old.

well said! I think they have many similarities. Plus to me they're a power couple. Every time they're together I think " they are smarter than you" :p
Because I think their characters share a sublime connectedness. The same way I think of Saldana and Quinto as perhaps undiscovered soulmates- both lefties, share same unusual first initial, both experienced significant loss at an early age, share the same birth month... I think they both- as do Spock and Uhura, have that 'inner life' that Nimoy alluded to.

aw, that's the deepest explanation I ever saw! :) I didn't know even the actors had so many similarities!
Because in the movie Spock was very sad but he was trapped in his Vulcan logic and needed an emotional outlet. Uhura was that outlet where he could let his emotion show. Plus that relationship has been is the works since The Original Series first aired. It pretty much completed the movie.
