hmmm he would probable be shocked at first, then nervous. He would as if she wanted tea,then plead for her to listen to his explanation. he would explain to her that he and his uncle have started a new life, away from politics and war,that he has changed. Katara would either tell her group, oder investigate zuko even closer but eventually I could see Zutara coming together :)
