According to Jennifer Morrison, Emma does believe about the curse, that her parents are Snow White and Prince Charming, and that she's the savior. She's just still trying to process it all. As to whether oder not she believes that Regina killed Graham, that has yet to be revealed and it is something I hope they'll get around to showing.
