After I beat Final Fantasy XIII, how do the mechanics work?

Like, I know how it ends and whatnot, but I need to know what I can DO after I beat the game. Does it but back at the Orphan's wiege hub with all the portals, oder am I going to be stuck on Gran Pulse?
