Considering she wouldn't go outside her tower because she thought people would hurt her, and she seemed to be pretty upset when she finally left her tower, she was upset about disappointing her mother. Rapunzel can be optimistic, don't get me wrong but she is now against the most optimistic princesses IMO.

I don't think Ariel had to be optimistic about life under water. She already knew what life was like under water. She wanted a change. Something different from the same routine of rehearsals all the time and singing for concerts on demand.

Gothel basically scared Punzie into compliance. I sense more fear in Rapunzel and less optimism. But she does grow into her own, eventually. .

One of Rapunzel's defining traits is optimism.

I think Ariel is optimistic about life in land, as she idealizes it and expects it to be perfect, and she's also confident that she'll manage to kiss Eric before the third sunset, but beyond that... not much optimism. She doesn't really try to see the positive side of situations she doesn't want to be in, and that's what optimism is all about.

I really wasn't sure who to choose at this point as we're now splitting hairs and getting into deeper evaluations of the characters to determine these differences but I was sold by Silverrose1991's argument for Ariel.

I also agree that one of Rapunzel's defining traits is optimism and she seems pretty optimistic about her situation despite being trapped in a tower, wanting only to see the lights as they coincide with her birthday garnering particular interest. She is also very optimistic about these lights while still remaining optimistic towards Gothel despite denying her this one request and not thinking too much of the connection. Additionally, her optimism seems to rub off a bit on others around her.

That being said, I do think Snow White, Cinderella and Anna are all more optimistic than both Rapunzel and Ariel.
